Grilled pizza

We wanted something quick and easy for dinner this weekend while we finished our yard clean-up (more on that later). It just so happens that one of the featured recipes from Eating Well magazine this month was grilled pizza.

Grilled pizza? Yes, we were skeptical, too. Won't it fall through the grating? Nope. That was thanks to a sturdy wheat pizza crust recipe that accompanied the pizza recipe.

The only trick is waiting for the coals to cool off sufficiently. But we used the time and the heat well by grilling the eggplant that became one of the pizza toppings.

It was fast, didn't require an oven (a plus for warm summer days), and oh so good!
